Cheese Souffle (Julia Child Style)


Since it has been raining all week and we had a lot of Gruyere cheese left over from the french onion soup I made last week. I whipped this one out for brunch. I just love putting egg and butter in the oven and watching them rise to ultimate happiness it is pure bliss. And as you can see from the picture the little one was made for Olivia and she loved it. I found this in a Julia Child French Cooking Book but made some adjustments to it. So if you would like you could add 1 cup of Gruyere cheese and paprika. I just wanted to be a little more healthy.


2 tablespoons butter
1 tablespoons grated Parmesan
2 teaspoons flour
1/2 cup milk
1/2 cup grated Gruyere or Cheddar
pinch nutmeg
2 egg yolks
2 egg whites
pinch salt

Directions
Heat oven to 375° F. Grease one 16-ounce or two 8-ounce ramekins with butter. Coat with the Parmesan, then tap out the excess. Set aside.

In a small saucepan, over medium heat, melt the remaining butter. Stir in the flour and cook 1 minute. Whisk in the milk and cook, stirring constantly, until the sauce boils, 1 minute. Remove from heat and stir in the cheese until melted. Add the nutmeg. Whisk in the yolks one at a time. Set aside. (The recipe can be made to this point up to 1 day ahead. Cover with plastic wrap and refrigerate.)

In a clean bowl, beat the egg whites with the salt until stiff (but not dry) peaks form. Stir 1/4 of the egg whites into the cheese sauce to loosen it. Gently fold in the remaining egg whites. Spoon into the ramekins. Bake until puffed and browned, 40 minutes for a 16-ounce soufflé, 20 minutes for two smaller ones. Serve immediately.

I can't wait to see my father-in-law. My mother-in-law and father-in-law have been on a vacation to Hawaii. I know that my father-in-law was watching the tube a couple of days because he is a devoted Giants fan. And, with the results of last night it looks like his favorite team is going to be in the World Series. Which is going to be here in SF in which my father-in-law has tickets to attend those game. He is a lucky man,

Mendocino, CA





My friend who just recently got married spend her honeymoon in Mendocino, CA. I think that this place seems like a dream come true. I love the cliffs right by the sea. This is defiantly going to be our next local trip. We are so lucky to live in a place where you can travel in any direction and be in a beautiful place.

Wait Until Dark


Tonight we are going to watch one of my favorite movies Wait Until Dark. We just have to wait until it gets pitch dark to watch this thriller. I'm so excited to watch it with Mike for the first time.

Before I got married I had a serious relationship with my cell phone. It was really intense!!! I would even put it under my pillow at night just in case I got a phone call or a text message. If I forgot my cell phone I couldn't function. It was as if my cell phone was my sixth sense or something. Sometimes I would try to analyze a text and try to figure out the message for hours and even days. A major amount of my salary would have to be budget out to my cell phone it was high maintenance with the excessive minutes I would go over and the text messaging. However, things have changed since getting married. In fact my cell phone is currently in my glove compartment not even charged. It is no longer sleeping by me. When people contact me it is easier to reach me by email or better yet my husband cell phone. His phone is always charged and he has a stronger bond with his little phone and makes sure it is able to be a means of communication at all times. I hate to admit it but since getting married I don't get that many calls and maybe if lucky a couple text messages on my Birthday and Christmas. And I like it that way!!! I like sleeping by my husband instead of my cell phone.

Happy Birthday Abby!!!!


Dear Abby,

You are my favorite sister today!!! I remember when I went to the hospital and heard you cry and thought that Mommy turned into a baby. Even, though that would get media attention. I'm glad that it was you that was born and that mom stayed at a growing age. Wow, you have grown-up way to fast. I can't believe you already have a college degree and a husband. I can't wait until you have a little baby too!!! You are so beautiful and smart . Oh, how I wish I could spend this day with you!!! I just love my little Abby. H
